Recipe for VMwave Success 360TM Celebration Pie

Ingredients

Crust Ingredients: 

350 gram (or 2 3/4 cups, loosely piled) all-purpose flour

1/2 teaspoon salt

1/2 teaspoon sugar

1/2 teaspoon xanthan gum

200 gram (or 1 cup) Crisco

100 gram (or 1/4 cup and 2 tablespoons) plain almond milk

Filling Ingredients:

2 cup frozen blueberries

1 cup sugar

3 tablespoons instant clear gel

1 tablespoon lemon juice

Sanding Sugar

Luster Dust

Instructions for Dough:

Mix dry ingredients in a food processor for 15 seconds

Cube shortening and add to the food processor

Pulse 10 times, or until mixture is breadcrumb consistency

Transfer mixture to a cold mixing bowl

Add 3/4 of the wet ingredients and hand mix with a cold fork or pastry cutter

Attempt to form dough into a ball, incorporate the remaining liquid if needed to hold together

Flatten dough into a disk, wrap in plastic and chill in the fridge overnight.

Instructions for Filling:

Simmer frozen berries and sugar on low until sugar melted

Add lemon juice and instant clear gel, reduce on medium heat, stirring frequently, until thickened

Spoon into bowl and chill in the fridge

Base Pie Instructions:

Roll out dough, cut into 10” circle and transfer to 9” pie pan

Crimp edges

Dock bottom of dough with a fork

Paint dough with an egg wash and let set for 15 minutes in the fridge before adding the chilled filling

Bake at 405°f degrees for 15 minutes, then at 350°f degrees for 45 minutes

Top Design Instructions:

Roll out remaining dough onto a parchment-lined baking sheet

Freeze dough on a sheet for two minutes

Cut out letter shapes, stars and lines with a sharp knife

Wash with the egg wash

Bake at 400°f  for 5 to 6 minutes

Let cool, then paint with luster dust

Add sanding sugar to base pie, then place top decorations

Serve with vanilla ice cream or stabilized whip cream
